Scary
You know what I find particularly scary? The thought of leaving my loved ones unprotected. In the last year, we've run across some pretty scary situations!
A parent who had drafted a will to protect their minor child, but failed to have it properly witnessed. Then, when they were tragically killed in an accident, their child was left with only a portion of what the parent had intended to provide, as well as loads of uncertainty and confusion on top of grief.
I've stood by the hospital bedside of a parent who didn't have a will and tried to sign one last minute, but by the time I got there it was too late, and the person was too weak to sign or understand what they were doing.
I've met with an adult child in tears because the power of attorney their parent attempted to sign to allow them to help them when they were incapable conflicted with a doctor's note, rendering the document potentially unusable.
Friends, these decisions may seem like things that are just troublesome to deal with or think about today. Life is so hectic, and there will always be another reason why this is not a convenient time. But the consequences of our failure to act can be so horrible, and the people who suffer the worst from our procrastination are the ones we care most deeply about.

RECIPES WITH RACHEL
Cozy Autumn Squash Soup
This creamy squash soup has the perfect blend of spices and is sure to warm you up on a chilly day. (Paleo, Vegan-Friendly)
Ingredients:
3 tbsp. butter, ghee, vegan butter or olive oil
6-8 cups diced butternut squash
3 carrots, diced (about 1 cup)
1 onion, diced (about 1 cup)
1 tbsp. brown sugar or pure maple syrup
1/2 tsp. salt
1/4 tsp. curry powder
1/4 tsp. nutmeg
1/8 tsp. cinnamon
1/8 tsp. cayenne pepper (optional)
1/2 cup pumpkin puree (not pumpkin pie filling)
1 cup apple cider or apple juice
3 cups vegetable broth
1/2 cup coconut milk or coconut cream (can sub heavy cream or half and half, if desired)
Instructions:
Heat butter or oil in a Dutch oven or soup pot over medium heat.
Add squash, carrots, and onion and cook about 10 mins, or until starting to soften.
Add brown sugar, salt, curry powder, nutmeg, cinnamon, and cayenne.
Stir and cook 1-2 minutes more, or until the spices are fragrant.
Add pumpkin, apple cider, and broth.
Stir to combine well, then bring the soup to a boil, then reduce to a simmer.
Simmer at least 20-25 minutes, or until the squash is tender enough to mash easily with a fork.
Stir in the coconut milk and remove from heat.
Puree in the pot using a hand-held immersion blender/stick blender or work in batches to puree the soup in a traditional blender. If using a regular blender, work carefully and slowly, letting the soup cool slightly and working in small batches to puree. (Do not fill the blender more than half full and cover blender with a towel to prevent splatters)
Garnish with fresh herbs, a sprinkle of cinnamon or nutmeg, or some pumpkin seeds.
Store leftovers in an airtight container in the fridge 4-5 days or in the freezer up to 2 months.
